Cooking with Palm Shortening


For those of you that have never seen Palm Shortening in person, it looks like mash potatoes, has the consistency of butter at room temperature AND even melts like butter if warm. (You can see a pool of melted Palm Shortening in my pail because somehow it was like 80 degrees in my house.

Palm Shortening make the most BEAUTIFUL cookies. You can use it for a direct replacement for butter with equal measurements. AND not that you can consider a cookie "healthy", but this does make for a healthier version of a cookie.

Here is the recipe I used...


  • 1 cup Palm Shortening
  • 1 cup white sugar
  • 1 cup packed light brown sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped pecans (optional)
  • 2 cups semisweet chocolate chips
Bake 10 to 12 minutes in an oven that has been preheated to 375 degrees F (190 degrees C).
